In Denmark we refer to this as &#8216;Hens in Tartlets&#8217;. Today instead of chicken we will use pheasant. Serve the tartlets as a starter or with your main course as a fancy side dish. Happy cooking.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>4 pheasant breasts<\/li><li>300 ml vegetable stock<\/li><li>1 carrot, finely chopped<\/li><li>1 onion, finely chopped<\/li><li>3 bay leaves<\/li><li>50 g butter<\/li><li>2 tbsp flour<\/li><li>400 ml milk<\/li><li>200 g white asparagus (canned or fresh)<\/li><li>12-14 tartlets (homemade or ready-made)<\/li><li>2 handful of fresh parsley<\/li><li>Salt and freshly grounded pepper<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Method<\/strong><\/h2>\n\n\n\n<p>In a pot add pheasant breast, vegetable stock, carrot, onion, pepper, salt and bay leaves and bring to a boil. Let cook for about 20 minutes. The pheasant breast must be done in the middle but try not to over-cook them. Set aside the broth of this water when finished \u2013 we\u2019ll use it for the sauce later.<\/p>\n\n\n\n<p>Next, melt butter in a pot. Slowly add flour while continuing to stir the mix. Add milk, bit by bit, keep stirring the pot until you end up with a smooth mix. Let simmer for 2 min while constantly stirring. Heat the tartlets in the oven for a few minutes.
