You can combine this little snack in so many different ways. Serve it as a starter or a light meal. I can also recommend a Roe Deer Bruschetta with butter fried chanterelles. I\u2019ve used roe deer in this recipe, but I can recommend any type of wild red meat. <\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>200 g Roe Deer Tenderloin (or other tender cut)<\/li><li>1 large Baguette, sliced <\/li><li>Olive Oil <\/li><li>Fresh thyme <\/li><li>1 Tbsp Butter <\/li><li>2 Gloves of Garlic <\/li><li>20 Cherry Tomatoes, cut in half <\/li><li>2 handful of Lamb\u2019s Lettuce or Rocket <\/li><li>Salt and Pepper <\/li><li>Parmesan, if you like <\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<p>Trim\nand clean the meat. Next, marinade it in olive oil, garlic, fresh thyme, salt\nand pepper and set aside for 2-3 hours. <\/p>\n\n\n\n<p>Preheat\noven to 200 \u00b0C. Cut cherry tomatoes into half and mix in a bowl with olive oil,\nsalt and pepper. Make sure they are covered with the oil and put the tomatoes\non a baking tray and place in the oven for 30 min. <\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow 768px\" \/><\/figure><\/li><\/ul><\/figure>\n<\/div>\n<\/div>\n\n\n\n<p>Meanwhile,\nheat a pan with butter and fry meat once all sides until it is golden brown. A\nroe deer tenderloin is a small cut of meat, thus I would give it 1 min. on each\nside. Next, transfer the meat to oven until the core temperature reaches 53 \u00b0C.\nIt should take about 5 min. Afterwards, let the meat rest for 5 min. before\nslicing it thinly. <\/p>\n\n\n\n<p>While\nthe meat rests, cut the baguette in \u00bd cm thick slices. Brush the bread slices\non both sides lightly in olive oil and place on a baking sheet. Toast bread\nuntil golden brown for about 8-10 min. Turn them over halfway through after 4-5\nmin. Let the bread cool for 5 min, then rub tops of the bread with halved\ngarlic gloves for an extra flavor punch. <\/p>\n\n\n\n<p>To\nserve, arrange the sliced roe deer tenderloin, oven baked tomatoes and lamb\u2019s\nlettuce on the bread slices and parmesan if you like.
