Eat it as a hot dog and enjoy with a good beer and some homemade ketchup. Or serve it for breakfast with scrambled eggs and good bread. You can add your favorite type of game meat, the recipe will work every time.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-1 Game meat <\/li><li>200g Free range pork with high % fat (e.g. neck fillet) <\/li><li>200g Lard <\/li><li>20g Salt <\/li><li>2 \u00bd tsp Pepper <\/li><li>\u00bd Nutmeg, finely grated <\/li><li>1 tsp Paprika <\/li><li>1 tsp Coriander, finely chopped<\/li><li> 10ml Ice cold light beer <\/li><li>Pork casing, soaked<\/li><\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow 1199px) 64vw, 768px\" \/><\/figure><\/li><\/ul><\/figure>\n<\/div>\n<\/div>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<p>Cut\ngame meat, pork and lard into small pieces that will fit into your meat mincer.\nChoose pork with a high fat percentage for instance neck fillet. Add salt,\npepper, nutmeg, paprika and coriander to the mix. Freeze for about an hour\nuntil the top of the meat started hard, but without being frozen all the way. <\/p>\n\n\n\n<p>Mince\nthe meat mix as fine as possible into an ice cold bowl. It is important that\nthe meat stay cold through out the entire process. If necessary take a break\nand put the meat back in the freezer to cool down.<\/p>\n\n\n\n<p>Now,\nknead the minced meat with your hands for 1 min. Add the ice cold light beer\ninto the mix and keep kneading intensively for 5-7 more minutes by hand. The\nmeat should be sticky and well mixed. Also in this step, it is very important\nto keep the meat at a low temperature, so it will not separate. <\/p>\n\n\n\n<p>To\ncheck the flavor, form a small meat ball of the mix and fry it. Then taste the\nmeat to check if it needs more salt or additional spices. <\/p>\n\n\n\n<p>Next, fill the minced meat to the pork casing and make sausages in the size you wish. Barbeque or fry the sausages at low heat until they have a crispy surface and are well done.
