Die Topinambur sch\u00e4len, halbieren, in einen Topf mit Wasser geben und zum Kochen bringen. Sie sollten nach ca. 10min weich sein.<\/p>\n\n\n\n<p>Bereiten Sie nun die Marinade&nbsp; f\u00fcr das Fleisch als auch f\u00fcr den Rosenkohl vor, indem Sie Oliven\u00f6l, Knoblauch, Salz und Pfeffer mischen. Das Filet mit der H\u00e4lfte der Marinade reinreiben und beiseite stellen.<\/p>\n\n\n\n<p>Nun den Rosenkohl halbieren, auf ein Backblech legen und mit der restlichen Marinade vermengen. Zitronensaft dar\u00fcber tr\u00e4ufeln und f\u00fcr 35min im Ofen backen. Nach 25min den Parmesan \u00fcber den Rosenkohl streuen und weitere 10min backen.<\/p>\n\n\n\n<p>F\u00fcr das Fleisch 25gr Butter in einer Pfanne auf hoher Flamme erhitzen. Das Filet auf jeder Seite 1 Minute goldbraun braten. Achten Sie darauf, die Butter \u00fcber das Fleisch zu gie\u00dfen, w\u00e4hrend Sie es braten. Anschlie\u00dfend das Filet auf ein Backblech legen und 8 (-12) Minuten im Ofen backen oder bis es eine Temperatur von 53 \u2103 hat. Lassen Sie das Fleisch f\u00fcr 10 Minuten mit K\u00fcchenfolie und einem Geschirrtuch bedeckt ruhen.<\/p>\n\n\n\n<p>Das Topinambur-P\u00fcree k\u00f6nnen Sie mit Wasser, Milch oder Sahne zubereiten. Wenn Sie sich f\u00fcr Wasser entscheiden, lassen Sie etwa 50 ml des Kochwassers im Topf. Wenn Sie sich f\u00fcr Milch oder Sahne entscheiden, gie\u00dfen Sie das Kochwasser ab und geben Sie 50 ml Milch oder Sahne hinzu. Nun p\u00fcrieren Sie die Topinambur, bis sich eine seidige Konsistenz ergibt und mit Salz, Pfeffer und Muskatnuss abschmecken.
