Bei dieser Technik wird das Fleisch in einem Vakuumbeutel versiegelt, in Wasser getaucht und lange Zeit bei einer genau kontrollierten und niedrigen Temperatur gegart. Schalten Sie Ihr Sous\nVide f\u00fcr 30 min bei 52 \u00b0 C ein.<\/p>\n\n\n\n<p>In der Zwischenzeit k\u00f6nnen wir die\nSauce zubereiten. Bei schwacher Hitze Schalotte, Knoblauch und Speck 5-7 min in\neiner Pfanne anbraten. Pilze hinzuf\u00fcgen und weitere 5-7 Minuten braten, bis sie\nweich sind. Die Mischung in eine Sch\u00fcssel geben und beiseite stellen. In der\ngleichen Pfanne den Rotwein bei schwacher Hitze 20 min k\u00f6cheln lassen. Als\nn\u00e4chstes Br\u00fche hinzuf\u00fcgen und f\u00fcr weitere 10 min k\u00f6cheln lassen.<\/p>\n\n\n\n<p>Nach 30 min eine Pfanne aufheizen\nund Butter darin schmelzen. Das Wildschweinfilet aus dem Beutel nehmen und\nsobald die Butter aufgeh\u00f6rt hat zu sprudeln, darin anbraten. Geben Sie einige\nfrische Kr\u00e4uter f\u00fcr zus\u00e4tzlichen Geschmack hinzu. Das Fleisch auf jeder Seite\nca. 1-2 min braten oder bis eine leckere Kruste entsteht.<\/p>\n\n\n\n<p>Zum Abschlu\u00df, die\nSpeck-Pilz-Mischung zum Rotwein geben und optional etwas Sahne hinzuf\u00fcgen. Bei\nmittlerer Hitze 3-5 min k\u00f6cheln lassen, w\u00e4hrend das Wildschweinfilet ca. 5 min\nruht.
