Dies ist besonders wichtig beim Servieren von rohem Fleisch. Meine Lieblingsrezept f\u00fcr Wildherz ist ein Tartar. Das Fleisch ist so mager, da\u00df es schwer zu kochen ist. Aber wenn ich es roh serviere, habe ich das volle Geschmackserlebnis. Servieren Sie das Wildherz-Tartar mit einer einfachen Dijonnaise und hausgemachten Pommes Frites.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\"><strong>Zutaten<\/strong><\/h2>\n\n\n\n<p><strong>Tartar:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li> Wildherz (das ist Rentier), gehackt<\/li><li>1 Eigelb<\/li><li>1 kleine Schalotte<\/li><li>1 EL. Kapern<\/li><li>1 EL. Cornichons<\/li><li>1 EL. Oliven\u00f6l<\/li><li>Frische Petersilie<\/li><li>Frischer Estragon<\/li><li>Salz und Pfeffer <\/li><\/ul>\n\n\n\n<p><strong>Dijonnaise:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 EL. Mayonnaise<\/li><li>1 EL. dijon Senf<\/li><li>Salz und Pfeffer <\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Zubereitung<\/strong><\/h2>\n\n\n\n<p>F\u00fcr das Tartar zun\u00e4chst das Wildherz vorbereiten und reinigen. Dazu\nentfernen Sie alles Gewebe, die Sehne sowie das Fett an den R\u00e4ndern des Herzens\nund auch in den separaten Herzkammern. Das Fleisch in kleine W\u00fcrfel schneiden\nund beiseite stellen.<\/p>\n\n\n\n<p>Alle restlichen Zutaten zerhacken\nund in einer Sch\u00fcssel mit dem Fleisch und dem vermischen. <\/p>\n\n\n\n<p>F\u00fcr die Dijonnaise die Mayonnaise und den Dijonsenf\nverr\u00fchren, anschlie\u00dfend etwas Salz und Pfeffer hinzuf\u00fcgen.
